Zesty Zucchini and Orzo Salad

My online classes have finally come to an end, so I have a lot more free time on my hands. And after an amazing day in Chicago, I am feeling reenergized. Todd thinks that energy would best be used in the kitchen. He is one smart (and hungry) man. My food philosophy has always been eat to live, so my early college days consisted of healthy but boring meals. It was not that I disliked cooking, but I felt the time it took did not fit into my busy schedule. Then, one day, I decided to bake some French bread. The whole mix, wait, knead, lots of waiting, and an entire day later finally enjoy the bread. My world changed. That bread was the most delicious thing I had created. Crunchy on the outside, hopelessly warm and soft in the middle, and it set my heart on fire. Now, every day cooking does not make me jump out of bed, yet. But I am excited about developing my kitchen skills and making my man a little happier in the process. He is amazing and he deserves it. This did not take an entire day, but I still poured my heart and soul into it. And don’t tell my husband, but I kind of enjoyed it.
